Italy is a place rich in history, breathtaking landscapes, and delicious traditional recipes. For this reason, we've decided to tell and celebrate them all in a single format: the Travel with “The Lantern”. Accompanied by the Chef Federico Fusca, we've crisscrossed our country in search of unique curiosities, mysteries, and artistic and culinary traditions. What we found has made us fall even more in love with our beautiful Italy.

The Story

For the third stage of this beautiful experience, we went to Vinci, in Tuscany, the town of the great Leonardo. Strolling through the picturesque alleys of the village, with breathtaking views and a glimpse of the fascinating medieval architecture, we arrived in the castle square, where the work is proudly displayed. The Man of Vinci. Inspired by Leonardo's Vitruvian Man, this work by artist Mario Ceroli has become the symbol of the town.

And to continue with art, straight after we went to the innovative Piazza dei Guidi, designed by contemporary artist Mimmo Paladino, who, inspired by Leonardo's scientific and artistic works, has created a lattice of geometries that break down and reassemble on planes made with slabs of Cardoso stone. A truly original experience.

However, Vinci is most closely linked to the genius of Leonardo So how could we not go to his birthplaceIt is located in Anchiano, a little outside the centre, and to reach it we decided to take the Green Road, a charming path winding through olive trees that offers unique emotions.

After spending a whole day following in Leonardo's footsteps, the best way to relax was to treat ourselves to a bit of rest at the Monna Caterina Wine Resort, a place named after the genius's mother, who lived here in her youth. Between walks in the vineyards of the estate, a quick visit to the cellars and a bruschetta with olive oil and rosemary, ideas for a new recipe quickly arrived. Federio Fusca then prepared a very tasty filetto alla chiantigiana... and who knows what else he would have wanted to prepare for us!

the recipe inspired by the trip

Chef Fusca Recommends...

Green pasta candies filled with ricotta and walnuts, flavoured with rosemary and crispy bread.
Ingredients
  • Ricotta and walnut sweets with green pasta 400 g
  • 5/6 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • Bread, two slices
  • 2 sprigs of rosemary
  • Salt and pepper to taste
Procedure
Bring some water to the boil, salt it lightly and boil the sweets.
Meanwhile, prepare the dressing: pour 5/6 tablespoons of oil into a pan and gently fry the peeled and lightly crushed garlic, and as soon as the garlic starts to brown, add the rinsed and finely chopped rosemary, then let the oil infuse for 3 minutes, after which turn off the heat.
Drain the sweets and add them to the pan, then sauté and mix with the dressing for 2 minutes over a medium heat.
To give this recipe even more oomph, brown 2 slices of bread cut into cubes in oil. This way you’ll get very delicious, fragrant croutons that will give the dish even more body.
Plate up and season with a grating of pepper, then serve hot at the table.
